The practice of tapping sugar maples, collecting the sap and boiling it down to syrup, carried out in the window when nights still freeze and days thaw. Roughly forty parts sap reduce to one part syrup, which is why sugarhouses run long boils. Somerset County in the Alleghenies hosts a maple festival around the tradition, running April 18 to 26 in Meyersdale in 2026, with a parade, competitions and crafts alongside the food.
